In the System Administration Guide it says the ExitPath stanza of qm.ini has parameter ExitDefaultPath. However, all sample qm.ini files I have seen have ExitsDefaultPath (with an 's'). Which is correct or are both ok?

The entry in the Sys Admin Guide is incorrect.
ExitsDefaultPath is correct.
