Is there a way to log incoming and outgoing transactions' count into a report, using an external utility or a script perhaps? There are about 100 servers, one queue manager on each. I have a few ideas but looking for some learned advice.

Take a look at Accounts and Statistics. MQ (Distributed) has the ability to periodically generate varuious statistics about what it's been up to. This can be useful for problem diagnosis, trend analyisis, charging or just plain curiosity.
