It's what I do with UK based compaines! Offers over the phone mean nothing until they're in print....

Hum... but have you ever used the printed paper to prove or claim something previosly agreed and not carried out?

In personal terms, twice.
In project terms, more often than I care to remember. Especially in terms of "why was this work not carried out? - Because it's not in the design / change / specification that was signed off!"
And the reverse of course "why did you build it like that? Because that's what the signed off design says!"
(This last often followed by the comment "Well, yes, that's what we signed off to but of course it's not what we want and you can't expect us to accept what you've delivered under these circumstances..." or something similar  )
