Well, in WBIs case it really depends on how much buisness logic you have in your flows; some sites have one or two little flows that convert data structures, while others have entire products written in flows. Anyway, generally speaking:

1. Regular maintenance: FixPacs, the occasional crash or bug.
2. Version upgrading: this is a rather heavy project in WBI, that may take weeks on end; hopefuly in the future migration will be easier...
3. Code support: Whomever wrote the code has to support it, usually 24-7; however, even if it's not the WBI's admin code, there is a marked tendancy to wake him up first, and employ the poor bastard as a coordinator between the different people involved in the malfunction. In truth, this is unavoidable, someone has to be in the middle.
4. Usually all the related QMs and DBs administration is done by the WBI admin himself, so take channels etc into account, as well as the (rare) DB crash.
5. Developement: Any new project, depending upon size, complexity, and WBI knowledge available to the programmers (reality - scant) must be supported along the way - on design (critical!), developement, QA, and deployement...
6. System tasks: applying failover/workload solutions, performance tuning, benchmark tests...

Best thing you could do, is invest one hour reading posts in the WBI forum one by one (don't forget to read about adapters, which apply to WBI as well), you'll get a much better impression of what it's really like - better than this stagnant list.
That's pretty much it, others will probably have more to add...
