How can I set in the Workbench so that e.g. the manager can only see the process posted by his team. E.g. We have manger 1 & 2, and officer A & B are under manager 1 and officer C & D are under manager 2. So when officer A & B posted a process, only manager 1 can see it, and vice versa, manager 2 can only see the process from officer C & D, although only one workflow has been defined.

You need to authorize each manager to see the workitems of those employees. The is done thru the Person (employee) object.
