We are currently running IBM MQ 9.1.0.5 on RHEL 7.9. Since this version of RHEL has announced EOS we are planning to migrate to RHEL 8.

is IBM MQ 9.1.0.5 compatible with RHEL 8.10 ?

Looks like RHEL 7.3 is the highest supported version.

Note that IBM MQ 9.1 LTS goes out of support on 30 Sep 2023, unless your company wants to pay for extended support to 30 Sep 2027.

You should consider upgrading to the shiny new MQ 9.4.
