Question1: I have a stand alone setup on my win2k Machine. I have a configuration called FMC where I have selected to have all components (including web-client).
Can I delete just the web-client from this configuration? After a few abortive attempts I decided I propably can't.
Question2: I have a stand alone setup. Here I have two configurations. One with most of the components except a web-client and the other config has just a web client.
After applying SP3 to this setup, when I go to the Webclient logon page it says "Web Client V3.3.2.2". Is that what it says or should it say "Web Client V3.3.2.3".

I guess you must have done this via fmczutil. I don't know that you can remove just the web-client from the configuration, but since you are not going to use it I see no reason why you cant just delete that portion of the directory tree.
