Is there any broker trace setting that would let me see the content of a HTTPRequestHeader that is generated in an HTTPRequest node? I tried running a service trace but it does not appear there.

For tracing this I use standard trace node and TCP Monitor from Apache.

It is very useful tool. I recommend it.
