The only way I know to define channel exits is thru MQSC when defining a channel. Is there a way thru a code I can configure channel exits given a channel name?

Look at the programmable command formats (PCF) manual under the section Change, Copy, Create Channel. Remember most of the things the GUI Explorer does is done via PCF commands (which is how remote admin works) so you can do almost anything in PCF that the GUI does.
Note I dont think the mainframe supports PCF commands
