Is there anything out of the box for MQ that allows us to see how long an MQGET with wait took before returning the message to the app? Any kind of setting somewhere I can flip that would cause some log to show this info? I would like to avoid coding in the app before and after the MQGET call to capture system times to try and get this info.

Not that I know of. Should be pretty easy to take a timestamp before and after the MQGET call in your application code though... That is if you have access to the source

You might even be able to do something with the API Exits in 5.3. That would keep your application unchanged.
