Is there a way to modify the filePath of the Trace node from ESQL? As for the FileOutput.

No, there is not.

The Trace node is a debugging facility. It is not intended to be used in production environments except when debugging an incident, and that's probably why it lacks the flexibility of the FileOutput node.

If you are using Trace nodes for logging, that's not best practice. A popular approach is to send log messages to a queue. A separate flow reads the queue and writes messages to a log file using log4j (or java.util.logging, or log4j2, or whatever logging framework meets your requirements).
